This summer is my first time having a share in a CSA! My CSA (Community Supported Agriculture) farm is currently churning out tons of snap peas and beans, and I was running out of ways to use them. Then Pinterest led me to this fabulously easy sugar snap pea recipe from Bon Appetit, and I modified it to accommodate the other produce I was overflowing with:

Snap Pea, Bean, and Tomato Salad with Feta & Almonds

  • 2 cups sugar snap peas, chopped in half
  • 2 cups green or yellow string beans
  • 1 cup cherry tomatoes, sliced in half
  • 1 bunch scallions, chopped
  • 1/4 cup sliced almonds
  • 1 cup feta, crumbled
  • 3 T olive oil
  • 2 T red wine vinegar
  • 2 T lemon juice, to taste
  • several pinches of salt and ground pepper
  • 1 pinch cumin
Mix the peas, beans, tomatoes and scallions in a large bowl. In a separate bowl, whisk together the olive oil, vinegar, lemon juice, salt & pepper, and cumin. Taste the dressing and add any more flavors you desire (possibly more lemon juice). Pour dressing over vegetables, mix together, and then add feta and almonds on top. Voila, easy summer salad!
